Garlic Butter Shrimp Pasta Recipe

Ingredients:

  • For the Shrimp:

    • 1 lb (450g) large shrimp, peeled and deveined
    • 2 tablespoons olive oil
    • 4 cloves garlic, minced
    • 1 teaspoon red pepper flakes (optional)
    • Salt and pepper to taste
  • For the Pasta:

    • 8 oz (225g) linguine or spaghetti
    • 3 tablespoons unsalted butter
    • 1/4 cup chicken broth or white wine
    • 1 lemon, juiced
    • 1/4 cup freshly grated Parmesan cheese
    • 2 tablespoons fresh parsley, chopped

Instructions:

  1. Cook the Pasta:

    • Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve 1/2 cup of pasta water and then drain the pasta.
  2. Prepare the Shrimp:

    • While the pasta is cooking, heat the olive oil in a large skillet over medium-high heat. Add the minced garlic and red pepper flakes, and sauté for about 1 minute until fragrant.
    • Add the shrimp to the skillet, season with salt and pepper, and cook for 2-3 minutes on each side until they are pink and opaque. Remove the shrimp from the skillet and set aside.
  3. Make the Garlic Butter Sauce:

    • In the same skillet, add the butter and let it melt. Pour in the chicken broth or white wine and the lemon juice. Let the mixture simmer for about 2-3 minutes until it slightly reduces.
    • Add the cooked pasta to the skillet and toss to coat in the sauce. If the pasta seems dry, add some of the reserved pasta water, a little at a time, until you reach the desired consistency.
  4. Combine and Serve:

    • Return the shrimp to the skillet and toss to combine with the pasta. Sprinkle with freshly grated Parmesan cheese and chopped parsley.
    • Serve immediately with extra Parmesan on the side, if desired.
