Ingredients:
-
For the Shrimp:
- 1 lb (450g) large shrimp, peeled and deveined
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 teaspoon red pepper flakes (optional)
- Salt and pepper to taste
-
For the Pasta:
- 8 oz (225g) linguine or spaghetti
- 3 tablespoons unsalted butter
- 1/4 cup chicken broth or white wine
- 1 lemon, juiced
- 1/4 cup freshly grated Parmesan cheese
- 2 tablespoons fresh parsley, chopped
Instructions:
-
Cook the Pasta:
- Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve 1/2 cup of pasta water and then drain the pasta.
-
Prepare the Shrimp:
- While the pasta is cooking, heat the olive oil in a large skillet over medium-high heat. Add the minced garlic and red pepper flakes, and sauté for about 1 minute until fragrant.
- Add the shrimp to the skillet, season with salt and pepper, and cook for 2-3 minutes on each side until they are pink and opaque. Remove the shrimp from the skillet and set aside.
-
Make the Garlic Butter Sauce:
- In the same skillet, add the butter and let it melt. Pour in the chicken broth or white wine and the lemon juice. Let the mixture simmer for about 2-3 minutes until it slightly reduces.
- Add the cooked pasta to the skillet and toss to coat in the sauce. If the pasta seems dry, add some of the reserved pasta water, a little at a time, until you reach the desired consistency.
-
Combine and Serve:
- Return the shrimp to the skillet and toss to combine with the pasta. Sprinkle with freshly grated Parmesan cheese and chopped parsley.
- Serve immediately with extra Parmesan on the side, if desired.
Tips for Perfect Garlic Butter Shrimp Pasta:
- Don’t Overcook the Shrimp: Shrimp cooks quickly, so be careful not to overcook it to keep it tender and juicy.
- Use Fresh Ingredients: Fresh garlic, lemon juice, and parsley will enhance the flavor of the dish.
- Wine Option: If using white wine, choose a dry variety like Sauvignon Blanc or Pinot Grigio for the best flavor.
